To keep ground venison tender and juicy, cook it over medium heat and avoid overcooking it – its low fat content will dry it out quickly. If you are making burgers or cutlets, let the mixture rest in the fridge before shaping it to allow the flavours to meld. In stews and sauces, venison is best browned until golden brown and then simmered slowly to soften the meat and release its flavour.
