Marinated venison ham
Venison ham weighing about 1 kg is marinated according to a special recipe of the chef of the Medžiotojų užiegos, using red wine, fresh rosemary and juniper berries. This expressive marinade subtly emphasizes the flavor of the venison, while maintaining its natural character. Sold in a baking bag, so it is extremely easy to prepare - just put it in the oven and bake as directed. Perfect for a festive table or a cozy weekend evening when you want something special but easy to prepare.
— HOW TO MAKE
Place the venison ham, about 1 kg, in the baking bag in a baking tin. Add a little water (about 100 ml) to the baking tin to keep it moist during baking. Preheat the oven to 160-170 °C (fan) and bake for about 45 minutes. Then carefully cut open the baking bag, increase the temperature to 180 °C and bake for a further 10-15 minutes, until the surface is nicely browned and caramelised.
about 20–25 minutes for each additional kilogram. It is important not to overcook!
Venison is lean, so it is best cooked to the following internal temperature levels:
- Rare: 52–55 °C Medium rare: 56–60 °C
- Medium: 61–65 °C
Before cutting, let the meat "rest" for 5-10 minutes.
