These pieces from various parts of the deer have a rich flavor and become especially tender and juicy after slow stewing. Due to their structure, they evenly absorb spices and sauces, giving dishes a deeper and richer flavor.

Venison is best cooked slowly and at a low temperature to keep the meat tender and juicy. Since venison is lean, a longer simmer allows the connective tissue to soften, giving it a tender texture. Before braising, it’s a good idea to briefly sear the pieces over high heat to bring out their natural flavor and create a delicious crust. The liquid – broth, wine, or vegetable-based sauce – helps the meat absorb flavors and retain moisture. For best results, braise in a covered dish over low heat or in the oven, allowing the flavors to meld and the meat to become extra tender.
