Wild boar "Zuikis" with plum sauce

INGREDIENTS

For "Bunny":

  • 500 g minced wild boar
  • 5 g breadcrumbs
  • 1 egg
  • 1 small carrot
  • 1 small celery stalk (~20 g)
  • Salt
  • Pepper

For the sauce:

  • 200 g plums (without skins and stones)
  • 40 g tomato sauce
  • 20 g sugar
  • 10 g apple cider vinegar
  • Salt
  • Pepper
  • Hot paprika (to taste)

PRODUCTION PROCESS

Preparing and cooking meat:

  • Boil the carrot and scald the celery stalk with boiling water.
  • Grind the cooked vegetables through a meat grinder and mix with the minced wild boar.
  • Beat the egg into the meat mixture, add the breadcrumbs, salt and pepper.
  • We knead everything well and form one larger or several smaller "bunnies".
  • Bake in an oven preheated to 180 °C for about 30 minutes, but baking time may vary depending on the size of the "Zuikis".

Preparing the sauce:

  • Place the plums in a pot and add enough water to barely cover them.
  • Cook for about 20 minutes until the plums soften.
  • Mix the mashed plum mass with tomato sauce, sugar, salt, pepper and hot paprika.
  • Cook over low heat until the sauce thickens.
  • At the end of cooking, add apple cider vinegar and mix well.

DELIVERY

The baked "Zuikis" can be cut into slices and briefly grilled for extra flavor. Serve with plum sauce.

Wine recommendations

  • It will go perfectly with wild boar "Zuikis" a red wine with acidity but a mild character , for example, Merlot, Tempranillo or Zinfandel.
  • If you want a lighter option , you can choose Pinot Noir or Grenache .
