Wild boar steaks in white wine sauce with spinach gnocchi

INGREDIENTS

  • 100 g white wine
  • 1 tbsp flour
  • 20 g butter

Gnocchi:

  • 300 g potatoes
  • 70 g spinach leaves
  • 1 egg
  • 75 g flour
  • 30 g grated hard cheese
  • Salt
  • Pepper
  • Butter (for serving)

PRODUCTION PROCESS

Preparing and cooking meat:

  • Gently pound the wild boar steaks with a meat mallet, sprinkle with salt, pepper, and thyme.
  • Leave to marinate for 20 minutes.
  • Pour oil into a heated pan, add the steaks and fry on both sides.
  • Pour in the white wine and let it evaporate by half.
  • Add butter, flour, spices to taste and sauté everything together in the sauce.

Preparing the gnocchi:

  • Boil the potatoes, peel them and grate them on a fine grater.
  • Scald the spinach with boiling water and chop finely.
  • Place the grated potatoes, spinach, flour, grated hard cheese, salt, pepper, and egg in a bowl. Knead the dough until it becomes smooth.
  • We form dough sausages and cut them into bite-sized pieces.
  • Boil in salted water until the gnocchi float to the surface, then cook for another 2-3 minutes.
  • Once cooked, drain the gnocchi and season with butter.

DELIVERY

Place the wild boar steaks on a plate, pour over the white wine sauce, and place the gnocchi with butter next to them.

Wine recommendations

  • A rich but refreshing white wine, such as Chardonnay, Viognier or Riesling .
  • If you like red wine , choose a milder or medium-bodied option - Pinot Noir or Grenache , which will complement the flavor of the wild boar but not overwhelm the delicacy of the white wine sauce.
  • When making the sauce, it is recommended to use a dry white wine , such as Chardonnay, Sauvignon Blanc or Pinot Grigio , which will give the dish a gentle acidity and an aromatic aftertaste.
