Bulgarian wild boar goulash

Preparation time: 20 minutes
Cooking time: 3–4 hours.

INGREDIENTS

  • 500 g wild boar
  • 1 medium onion
  • 1 medium bell pepper
  • 1 medium carrot
  • 1 jar of tomatoes in their own juice
  • 300 g of game broth
  • 2 tbsp flour
  • Salt
  • Pepper
  • Thyme
  • Oil for frying

PRODUCTION PROCESS

Preparing and stewing meat:

  • Cut the wild boar into small pieces.
  • Fry in a pan with a drizzle of oil until nicely browned.
  • Transfer to a pot, add enough water to almost cover the meat, and simmer over low heat for about 2.5–3 hours, until tender. Add more water if necessary.

Preparing vegetables and sauce:

  • Add the chopped onion, bell pepper, and carrot to a heated pan with oil and fry until softened.
  • Add the flour, stir, and cook for a few more minutes until the flour turns a light golden color.
  • Add the tomatoes in their own juice and the venison broth.
  • Add salt, pepper, thyme and mix well.

Final stew:

  • Add the prepared vegetables and sauce to the pot with the stewed meat.
  • Simmer for another 30–40 minutes until all the flavors combine and the goulash thickens.

DELIVERY

Goulash can be served with mashed potatoes, boiled rice, or fresh bread. Before serving, you can garnish it with fresh herbs.

Wine recommendations

  • With wild boar goulash will fit perfectly medium-bodied red wine , for example, Merlot, Tempranillo or Sangiovese , which will balance the acidity of the tomatoes and the richness of the spices.
  • If you like a richer red wine , choose Syrah or Cabernet Sauvignon .
